Straight pressing followed by a cold stabilisation
(around.6°C) of three days to gain aromatic intensity and smoothness.
Debourbage and natural temperature increase. Alcoholic fermentation at
controlled temperature (between 16-18°C) Maturing on fine lees, then fining,
filtration and bottling at Clos Gautier by ourselves

Shiny salmon robe with pink reflections. The nose is very expressive
and pure. The nose is on the peach, pear, after aeration come fresh raspberries.
In mouth, the attack is fresh, tangy then comes roundness, the structure is
pleasant and well balanced. The wine is very elegant and keeps the promise
made by its A.O.P.
It will go well with fish dishes, poultry and grilled meat and of course by itself.
