Wine making method :

De-stemming, soft crushing, vatting. Cold
maceration (12 ° C) during 48 hours, then natural temperature increase.
Alcoholic fermentation between 26 et 29°C, with pumping over twice a day.
3 weeks maceration, then we draw off the wine.
We blend both press wine and free run wine, then the malolactique
fermentation takes place. Maturing in oak casks during 11 months, soft
filtration and bottling at Clos Gautier by ourselves.

Intense ruby shiny colour, with purple reflections. The nose is on
red and black small fruits, underlined by an elegant and thin wood aroma. It
is full and silky on the palate. Flavours of jammy red fruits. The tanins are
matured and round. Good structure.
The Final is spicy, and lightly minty. Will be at its best in 4 years.
