Direct pressing followed by a cold stall (at about 6°C) lasting 9 days to gain finesse and aromatic intensity. Setting and ascent to autonomous temperature. Alcoholic fermentation in thermo-regulated tank (between 16-18°C). Maturing on fine lees, collage, filtration then bottled by us to the property. |
